Out with the old….

Time to purge. I did it last year and it felt good. Here are the remainder of the 2011 recipes (and one from 2010) I’d been half writing and have been sitting in my “drafts” folder for months.

I feel silly posting such simple meals like this one. It seems like such a no brainer type of recipe. To be honest though, I forget how easy and delicious it is myself. I rarely make it. It really is fast and so simple to make and the payoff, well, all I can say is: shaBAM. That just about sums it up.


Asian Turkey Burgers with Sriracha Mayo

Have you been to Jessica’s blog yet? She’s the creator of How Sweet It Is blog. She posts great recipes and really often. Every time I stop by there’s a new recipe, with tons of photos, up and ready to be drooled over. I found this recipe for turkey burgers on her site. It was definitely a winner!
The burgers stay nice and moist and the creamy mayo is spicy and tangy bringing the whole burger together wonderfully. This mayo is also great for dipping french fries in. Also, great with tater tots…just sayin’.

Sweet Potato, Kale and Caramelized Onion Pizza

Phew, that was quite a mouthful…a delicious mouthful.

 

Am I the only one that forgets about homemade pizza? It’s so easy to make and the payoff is always delicious.

 

My go-to pizza dough is this one. It’s easy and tasty, two things I love.

 

I sometimes buy a lot of something then have no idea what to do with it. That’s what happened when I bought kale this past week. I bought a lot, then the only thing I could think to put it in was soup, and I wasn’t in the mood for soup. I’m so glad I stumbled on this recipe. It was uber tasty. Give it a try and feel free to switch it up as you see fit!

 

The original recipe calls for the addition of mozzarella cheese. I’m not eating cheese right now, but that would be a fantastic addition. The sweet potato gets nice and creamy and the kale will be crispy and crunchy while the onions are soft and sweet, it’s a delicious pizza. Try immediately.
